10-minute Meals: 4 Recipes for a Quick, Healthy and Cheap Dinner

It’s not easy to eat food that’s quick, healthily as well as cheap, without compromising on one of these virtues.

Not if we have anything to say about it!

The solution is to master several recipes, such as the four we’ve listed below! These are all easy to complete, calorie-conscious and light on the pocket.

If you're in a hurry or late home from work, these 10-minute dinners are your weekday winners.

1. Aromatic Lamb and Spinach Curry

Think you can’t make a gorgeous, East Asian-style dish in under 10 minutes? Think again. This curry is so quick and convenient, you can dish it up in just two shakes of a lamb’s tail.

All you need is:

  • 2 tbsp curry powder
  • Healthy drizzle of Heritage Virgin Olive Oil
  • 250g lamb fillet, chopped
  • 3 - 5 green chillies
  • 1 can tomatoes
  • 1 packet spinach, chopped

Then, to make:

  1. Combine curry powder with olive oil, and fry with the lamb.
  2. Add chillies, and cook together until lamb is cooked through (should take around 5 minutes).
  3. Add the tomatoes and spinach, and simmer for 5 minutes more. Add salt and pepper to taste.

Top tip: Eat with a simple side of rice, which you can boil at the same time as making the curry, or some hot cannellini beans.

2. Broccoli, Carrot and Parmesan Soup

Perfect for those chilly evenings, this two-veg soup is a dream to knock up (and to eat!).

All you need is:

  • 2 heads broccoli, chopped (including the stalks)
  • 3 carrots, chopped
  • Some parmesan
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice

Then, to make:

  1. Boil 400ml water in a saucepan, and add the broccoli, carrots and soy sauce.
  2. Cover and simmer until the broccoli and carrots are tender.
  3. Puree them with a spoon, or in the blender, and add salt, pepper, parmesan and lemon (and whatever other spices you may want!).

Top tip: You can repeat this recipe with a number of vegetables, including potatoes and aubergines - just ensure you pick veg that softens quickly if you want to keep within the 10-minute time slot!

3. Hot Tomato Pasta with Fresh Vegetables

Beloved by students and Italians in particular, pasta is a dinnertime staple that simply cannot be overlooked if you’re looking for a quick fix. Served up with fresh veg and tomato sauce, it’s hard to beat.

All you need is:

  • 1 bag of pasta
  • 1 tbsp of Heritage Virgin Olive Oil
  • 2 tins of tomatoes
  • 1 tin of sweetcorn
  • 2 onions, finely chopped
  • A handful of spinach

Then, to make:

  1. Combine the onions with the oil and fry over the hob. Then, combine with the tomatoes, sweetcorn and spinach, and cook together.
  2. Place the pasta in boiling water, and boil until soft.
  3. Mix the pasta with the sauce, add salt and pepper to taste, and serve.

Top tip: Throw in some chilli flakes, or finely chopped chillies, for a dish with extra oomph!

4. Tuna Stir-Fry

So many vegetables, so little time. A stir-fry could be the perfect solution.

All you need is:

  • 1 tbsp Heritage Virgin Olive Oil
  • 1 pack of Heritage Oriental or Vegetable Stir Fry
  • 1 tin of Tuna

Then, to make:

  1. Heat the oil in a frying pan
  2. Add the stir fry vegetables to your pan with the tuna and cook on a medium-high heat for a few minutes. Once cooked through, serve on it's own or with Heritage rice.

Top tip: If tuna doesn’t tickle your fancy, swap for super-healthy Quorn Chicken Pieces (also available in store) and fry for two extra minutes. No fuss, no muss.
