Fragrant chicken curry

Ingredients

  • 1 chopped Heritage onion
  • 2 chopped garlic cloves
  • 2 tbsp curry powder
  • ½ tsp cinnamon
  • 1 sweet potato, chopped into chunks
  • 4 chicken breasts, chopped
  • 400g coconut milk
  • 100g cherry tomatoes

Method

  1. Add the tsp of oil to a large pan and cook the garlic and onion for 5 minutes before adding the curry powder and cinnamon
  2. Cook for 1 minute, and add the chicken and sweet potato
  3. Pour in the coconut milk and leave to simmer for 10 minutes
  4. Add the tomatoes and cook for a further 2 minutes
  5. Serve up with some tasty rice or naan for a scrummy curry feast
