2 big cos lettuce leaves (any salad will work if you don’t have these)
1 tbsp sunflower oil
1 ½ tbsp of grated cheese (preferably parmesan!)
2 ½ tbsp Greek yoghurt
1 clove of garlic
1 tbsp lemon juice
Season the chicken by rubbing it with oil and sprinkling a little salt and pepper. Cook these on a griddle for around 8 minutes on each side, or until cooked. Toast the garlic.
If you are not using pre-made dressing, whilst cooking, mix your Greek yoghurt, shaved cheese and lemon juice with a tbsp of cold water. Afterwards, cut the garlic clove in half and rub it on the toasted bread. Crush the garlic. Add this to the dressing.
Slice the cooked chicken. Top the toast with the cos lettuce, chicken and then drizzling the dressing on top. If you are using pre-made dressing, add the cheese after the lettuce and before the chicken.
