Pesto chicken skewers

Ingredients

  • 1 jar of Sacla’ sun-dried tomato pesto
  • 4 Heritage chicken breasts
  • 12 wooden skewers
  • 1 Heritage lime

Method

  1. Soak the wooden skewers to prevent them from burning
  2. Cut the chicken breasts into thick strips
  3. Coat the chicken with pesto and leave to marinate in the fridge for an hour
  4. Take out of the fridge and place onto the skewers
  5. Finish each skewer with a wedge of lime
  6. Preheat a very hot griddle pan and place the chicken skewers onto it
  7. Cook for around 5 minutes on each side and ensure they are cooked through
