Quick and Easy Salmon Stir Fry Recipe

This healthy and gluten free recipe is full of flavour with juicy salmon fillets and a range of colourful vegetables. It uses rice noodles and tamari (gluten free soy sauce) so is tasty and suitable for Coeliacs! 

Ingredients

  • 4 Heritage salmon fillets
  • 2 tsp Chinese five-spice
  • 250g dried rice noodles
  • 1 Heritage red pepper
  • 10 Heritage spring onions
  • 140g Heritage mangetout
  • 1 tsp Heritage garlic granules
  • 1 tsp Heritage ground ginger
  • 200g Heritage baby sweetcorn
  • 6 tbsp Tamari sauce (GF soy sauce)

Method

  1. To begin, deseed and slice your pepper, slice the spring onions and cut the mangetout in half
  2. Sprinkle the five-spice over the salmon and grill the salmon fillets for 12 minutes
  3. Meanwhile, cook the noodles according to on-pack instructions
  4. Place a wok over a high heat and add a spray of low calorie cooking spray
  5. Add the red pepper, spring onions, mangetout, sweetcorn, garlic and ginger. Stir-fry for 8 minutes
  6. Add the noodles and stir-fry for a further 2 minutes
  7. Once the salmon fillets are cooked, break into small pieces and mix into the stir-fry
  8. Top tip: save leftovers and have a healthy tea too!
