Beautiful bruschetta

What you'll need
  • 8 plum tomatoes, peeled
  • 3 cloves garlic, whole
  • 3 cloves garlic, peeled
  • 2 tbsp balsamic vinegar
  • 120ml virgin olive oil
  • 1 bunch fresh basil
  • 1 tbsp salt
  • Freshly ground pepper, to taste
  • 12 slices of bread, or a baguette halved and cut into 12 parts
Cooking directions

Preheat the grill (for the bread).

Slice your tomatoes down the middle, and core out the seeds. (Throw the seeds out, or reserve them for a tomato sauce!)

Dice the tomatoes, and roll and chop the basil. Place all these, plus the garlic, olive oil, balsamic vinegar, and salt and pepper, together, and mix.

Let the mix stand for an hour at room temperature for the flavors to come together.

Baste the bread lightly with olive oil and toast over a medium-low grill. Once done, rub them with garlic, and arrange on a plate with the bruschetta mix on top.
