Roasted garlic and brie toasts

Roasted garlic and brie toasts

Vegetarian
What you'll need
  • 1 baguette, cut into 24 thin slices
  • 1 and a half tbsp butter
  • 1 large garlic head, cloves separated and unpeeled
  • 12 oz brie, rind removed
  • A pinch of pepper
  • A handful of fresh watercress
Cooking directions
1.

Preheat oven to 350°C.

2.

Line a baking tray with baking paper, and place the baguette slices on top. Bake until they're golden brown (it should take about 10 minutes). Cool.

3.

Put your butter in a saucepan, and heat it until it melts. Stir continuously to avoid it sticking to the bottom of the pan and burning.

4.

Add garlic to the butter mix. Pour the butter mix into an ovenproof dish, and bake until the garlic is soft through (this should take about 20 minutes). Mash the garlic and butter mix until it's basically smooth.

5.

Add the brie and pepper to the mix, and mix well. Spread a little on each toasted slice of baguette.

6.

Season with pepper.

7.

Cook under the grill until the cheese is bubbling.

Top tip

Want to be super prepared? You can make the cheese mixture up to six hours in advance! Just cover it once it's done and let it stand at room temperature.
