Spiced salmon kebabs
- 2 tbsp mixed herbs
- 1 tsp mixed spices
- 1 tsp salt
- 1 and a half lbs skinless salmon, diced
- 2 lemons, thinly sliced
- 2 tbsp Virgin Olive Oil
Prepare grill for medium heat.
Mix herbs, spices and salt together in a small bowl and set aside.
Thread salmon and folded lemon slices onto eight pairs of parallel skewers (making eight kebabs).
Brush with Virgin Olive Oil and season with reserved spice mixture.
Grill, turning occasionally, until fish is hot and cooked through. This should take between 5 - 8 minutes.
