Tomato puff pastry bites

What you'll need
  • 1 puff pastry square
  • 1 tomato (or a few baby tomatoes)
  • 1 tbsp cheese, grated
  • 1 onion, diced
  • Some feta cheese (optional)
  • Salt and pepper
Cooking directions
1.

Preheat oven to 425°C.

Cut your tomato (or baby tomatoes) into medium slices. 

3.

Cut your puff pastry into smaller squares, that are roughly about the same size as your tomato slices.

4.

Line a baking tray with baking paper, and put your puff pastry squares on top. 

5.

Add your diced onion, and a dash of cheese, on top of each square. 

6.

Place a tomato slice on top.

7.

Season with salt and pepper, to taste. Bake for 10 - 12 minutes. Check on them often - you want them golden brown and nicely puffed. Depending on the puff pastry size, the cooking time will vary.
