BBQ chicken burgers
Succulent and juicy with the tangy sweetness of homemade BBQ sauce. Save some leftover marinade for dipping your chips in!
- 4 chicken breasts
- 4 rashers of bacon
- 4 large burger buns (we like brioche buns!)
- 4 lettuce leaves
- 1 Beef tomato
- 1/2 Red onion
- 4 tbsp brown sauce
- 4 tbsp tomato ketchup
- 2 tsp honey
- 2 garlic gloves
- Small splash of chilli sauce
Crush the garlic cloves.
Make the marinade by mixing the ketchup, brown sauce, honey, garlic and chilli sauce
Slice halfway down through the length of the chicken breast. Open it out by gently pulling either side of the slice away from each other, in the same way you open a book.
Flatten it out with your hand. Toss in the marinade and chill.
Barbecue the chicken until it's cooked through, turning regularly so it doesn't stick to the grill. Cook until charred for around 10 minutes.
At the same time, cook the bacon until it's beautifully crisp.
Cut the burger buns in half and toast bread side down.
Put together your burger. Layer the lettuce on the bottom followed by a thick slice of the tomato, and a few rounds of sliced red onion. Add the chicken on top and serve.
