Cheesy Hasselback Potatoes
- 2 medium potatoes
- Butter or oil (for brushing)
- Salt & pepper (to taste)
- Grated cheese
Preheat your oven to 200°C.
Cut your potatoes into thin slices - making sure not to cut all the way to the bottom, so they are still joined.
Transfer to a baking tray and brush with oil or butter and roast until golden and crisp. Remember to brush your potatoes with more oil (or butter) as they cook.
Add slices of your favourite cheese in the gaps between your potato slices and return to the oven until melted.
