Cheesy hasselback potatoes
Ideal as a side or on their own, these cheesy hasselback potatoes make for the perfect comfort food.
- 750g baby potatoes
- Butter or oil for brushing
- Salt & pepper to taste
- Grated cheese
Preheat your oven to 200°C/180°C/gas mark 6.
Make small vertical cuts across the width of your potatoes. Slice about three-quarters of the way down, being careful not to cut all the way through – the potato still needs to be whole, not in slices.
Transfer to a baking tray and brush with oil or butter and roast for about 1 hour or until golden and crisp. Remember to brush your potatoes with more oil or butter as they cook.
Add your favourite grated cheese in the gaps between your potato slices and return to the oven until melted.
