Chicken satay

Our easy chicken satay recipe lets you enjoy a home cooked fakeaway and pairs perfectly with jasmine rice.

What you'll need
  • Chicken breast, diced
  • 1 garlic clove, chopped
  • 2 tbsp soy sauce
  • 1 tsp chilli flakes
  • 2 tbsp crunchy peanut butter
  • 1 tbsp tomato puree
  • 100ml pineapple juice
  • Bamboo skewers
Step 1.

Soak the wooden bamboo skewers for 20 minutes to prevent them burning.

Step 2.

While the skewers are soaking, place the chicken in a shallow, non-metallic dish.

Step 3.

Mix together all remaining ingredients in a separate bowl. 

Step 4.

Pour the mixture over the chicken and toss well to coat all the pieces. 

Step 5.

Cover and leave to marinate for 30 minutes.

Step 6.

Thread the chicken onto the wooden skewers.  Be careful not to overload the skewer, the chicken needs room to properly cook.

Step 7.

Place them under a hot grill for 15 minutes, turning frequently, until evenly browned and cooked through.


Serve with jasmine rice.
