
Chicken, tomato and mozzarella pasta
Fresh, tasty and simple – this tasty pasta dish is a family favourite and the perfect mid week meal.
- 450g Co-op penne pasta
- 200g Co-op fresh mozzarella, cubed
- 2 Co-op British chicken fillets, cut into chunks
- 2 garlic cloves, crushed
- 2 tbsp olive oil
- 1 jar Co-op tomato & garlic pasta sauce
- 1 Co-op large onion
- Salt & pepper, to season
Cook your pasta in a saucepan of boiling water for around 10-12 minutes on a medium heat.
Meanwhile, heat olive oil in a pan over another medium heat, then add the chicken chunks with a sprinkle of salt and pepper to season.

Cook through until golden around the edges and then remove from the pan onto a plate.
Add the chopped onion and garlic to the same pan until golden. Reduce the heat and add the jar of pasta sauce to the mix.

Then add the chicken back into the pan and combine all ingredients over heat for a further 5 minutes. Remove pan from the heat and then add the cubed mozzarella, leaving it to sit undisturbed for about 2 minutes until it begins to melt.
Drain your pasta in a colander and then drizzle with a little olive oil and serve out evenly onto your plates.

Pour on your sauce and chicken mix over the pasta and add a little further seasoning if desired. Serve with a side bowl of fresh salad leaves.Â
