Classic chicken salad

This classic chicken salad is a light and tasty spring dish ideal on its own for one, or as a side for two.

What you'll need
  • 115g Co-op baby leaf salad
  • 2 Co-op boneless chicken thighs
  • 1 Co-op pepper, seeded and chopped
  • 1 Co-op vine ripened tomato, sliced
  • A salad dressing of your choice (optional)
Method
Step 1.

Preheat the oven to 220°C/200°C fan/gas mark 7.

Step 2.

Season the chicken thighs with salt and pepper, then place on a baking tray in the oven.

 

Bake for 35 minutes until the skin is crispy. Remove from the oven and leave to cool.

Step 3.

Add the baby leaf salad, chopped pepper, and sliced tomatoes to a salad bowl.

Step 4.

Cut the cooled chicken thighs into strips and add to the salad.

Top tip

Upgrade your salad with a homemade dressing like honey and mustard or sesame and soy.
