Cod and potatoes

Whip up fish in a flash. Pair with potatoes and green beans for a healthy summertime meal.

What you'll need
  • 2 Co-op cod fillets
  • 750g Co-op Baby Potatoes
  • 170g Co-op trimmed fine beans
  • 1 tbsp butter
  • Olive oil
  • Chilli flakes (optional)
  • Fresh parsley
  • Salt and pepper, to season
Step 1.

Preheat the oven to 200°C/180°C fan/gas mark 6.

Step 2.

Arrange the cod fillets on a baking tray, drizzle with olive oil, and season with salt, pepper, and chilli flakes if using.


Bake in the oven for 10-12 minutes.

Step 3.

Meanwhile, pop the potatoes into a large saucepan and cover with water. Boil over a medium-high heat for 10-15 minutes until tender.


Once cooked, drain and mix with the butter.

Step 4.

In a separate pan, bring salted water to the boil and add the beans.


Boil for 3-5 minutes.

Step 5.

Serve up the fish, potatoes and beans at the same time.


Sprinkle a bit of fresh parsley over the cod for that extra special touch.
