Easy banana bread
A staple bake for anyone's repertoire, our banana bread is moist, simple and easy to make. It goes perfectly with a cup of tea or coffee!
- 250g flour
- 1 tsp baking soda
- A pinch of salt
- 113g butter
- 150g brown sugar
- 2 large eggs, beaten
- 2 overripe bananas, mashed
Makes 12 slices
Preheat oven to 180c/160 fan/gas mark 4.
Grease a 9 x 5 loaf pan.
In a large bowl, combine the flour, baking soda and salt. Give it a stir to ensure it’s well mixed.
In another bowl, mix together the butter and brown sugar until light and fluffy.
Add the eggs and mashed banana to the sugar and stir until it’s well blended.
Add the banana mixture to the flour. Stir until it’s well incorporated into a batter.
Pour it into a loaf pan.
Bake in the over for around an hour or until a toothpick inserted into the centre comes out clean.
Let it cool in the tin before taking out. When cool, decorate with icing – we like lemon drizzle flavour!
