Easy Bruschetta

An Italian staple that's perfect for a fancy picnic or quick fresh snack. We've chosen tomato bruschetta, but you can easily use artichoke or chicken too.

What you'll need
  • 3 large ripe tomatoes, seeded and diced
  • 1/2 large red onion, diced
  • 1 cucumber, peeled, seeded, and diced
  • 1 handful of fresh basil leaves, chopped
  • Pinch of salt and pepper
  • 1/2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 baguette
  • 2 cloves garlic, peeled
Step 1.

In a large bowl, combine tomatoes, onions, cucumbers, and basil.


Season lightly with salt and pepper. 

Step 2.

Add olive oil and vinegar, and toss well to combine.

Step 3.

Let stand at room temperature for an hour to let the flavours mingle together.

Step 4.

Slice the baguette diagonally into 1/2-inch-thick slices.


Brush both sides lightly with olive oil and grill until toasted.

Step 5.

Take the bread out from under the grill. Lightly rub one side of the bread with the garlic cloves.

Step 6.

Sprinkle the bread with salt and pepper and add the tomatoes on top.

Step 7.

Let the juices soak into the bread for a couple of minutes before serving.
