Homemade guacamole that’s ready in minutes, goes perfectly with Mexican food or as a dip on its own. If you like a little kick to your guacamole, add chilli flakes alongside the seasoning.
- 1 small red onion
- 1 large ripe tomato
- 3 ripe avocados
- 1 sliced and deseeded chilli
- A handful of coriander
- Juice of 1 large lime
- Tortilla crisps to serve
Cut the avocados in half and pull the stone out. Scoop out the flesh into a bowl.
Use the flat side of a spoon to crush and break up the tomato. Add the pulp to the avocado.
Roughly chop the coriander (stalk and leaves) and finely dice the red onion.
Mix together until well incorporated, folding all the ingredients together until you have a runny gooey mix.
Add the onion, lime juice, coriander and chilli into the bowl with the avocado and tomato. Season with salt and pepper.
Use a whisk or potato masher to roughly mash everything together, taste and add more seasoning if needed.
