Eggs Benedict

What you'll need
  • 2 eggs
  • 2 slices parma ham or smoked salmon
  • 1 toasting muffin
  • 25g Hollandaise sauce mix
Step 1.

Bring a saucepan of water to the boil. Lower the heat down to a simmer.

Step 2.

Break the eggs into two separate cups of ramekins. Toast the muffin for a few minutes on either side.

Step 3.

Prepare the hollandaise sauce according to packet instructions.

Step 4.

Using a spoon, create a vortex in the simmering water and slide in an egg. Cook for 2-3 minutes. Repeat with the remaining egg.

Step 5.

Begin assembling the dish! Spread some hollandaise sauce on each muffin half, then add the ham or salmon and top with an egg. Spoon over the remaining sauce and serve immediately.
