Fairy Cakes

Easter holidays, half term or a rainy afternoon? That can mean only one thing - baking. Our fairy cakes tick all the right boxes - tasty, quick and super simple - so much so that the kids can get involved too.

What you'll need
  • 2 eggs
  • 120g sugar
  • 120g self-raising flour
  • 120g butter, melted
  • 130g icing sugar
  • 50g butter
  • 30g cocoa powder
  • Decorations of choice
Method
Step 1

Heat your oven to 180C/160 fan/gas mark 4. Line a muffin tray with paper cases.

Step 2

Whisk the eggs and sugar together.

Step 3

Add the flour and butter, bringing the mixture together. Spoon the mixture into paper cases.

Step 4

Bake in the oven for about 15 minutes. When ready, the cakes should have a golden top. Remove from the oven and allow to cool.

Step 5

Beat together the icing sugar, cocoa powder and butter to make the icing. Ice the buns with a small spoon. Immediately add your chosen decorations.

Top-tip

For the decoration, there’s no right or wrong answer! Perhaps some hundreds and thousands? Smarties? White chocolate buttons? You choose!
