Festive Red Cabbage

What you'll need
  • 2 tbsp oil
  • Beef stock
  • 1 small red cabbage; halved and thinly sliced
  • 1 onion; sliced
  • 2 tsp salt
  • 2 tbsp lemon juice
  • 100ml cider vinegar
  • 2 slices bacon
Method
1.

Brown the bacon and onion in pan with the oil.

2.

Dissolve a beef stock cube in 500ml of water and stir in the vinegar, cabbage, lemon juice and salt.

3.

Cover and simmer gently for 30 minutes.
