
Fluffy American pancakes
Master the basics with this quick and simple pancake recipe for perfect results every time. Make sure your pan is piping hot, you’ll have a pile of pancakes ready in no time. Stack them high and top with your favourite toppings.
- 135g plain flour
- 1 tsp baking powder
- 1 large egg
- 2 tbsp cater sugar
- 130ml milk
- Pinch of salt
- 2 tbsp melted butter, cooled
Sift the flour into a bowl with the caster sugar, salt and baking powder into a bowl.
In a separate bowl, beat the egg and whisk together with the milk. Then gently whisk in the melted butter.
Pour the milky mixture into the flour mixture. Then, using a fork, beat until the mixture becomes a smooth batter.

Leave it to stand for a few minutes.
Heat the oil in a non-stick frying pan
Add a ladle of batter to the pan. At this point, the mixture may seem thick but that’s how it should be for fluffy, chunky American pancakes.

Let the top of the pancake begin to bubble and then flip it over.

Cook until both sides are golden brown and the pancake is about 1 cm thick.

Ladle some of your pancake mixture into the centre of the pan, then tilt the pan side to side to cover with your mixture.
Serve with your favourite toppings!
