Grilled Bean Burger

What you'll need
  • 4 cloves garlic, minced
  • 1 large onion, finely chopped
  • 1 tbsp Virgin Olive Oil
  • 1 medium carrot, shredded
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 15-oz can pinto beans, rinsed and drained
  • 1 15-oz can black beans, rinsed and drained
  • 210g Quick cooking oats
  • 2 tbsp Dijon mustard
  • 2 tbsp soy sauce
  • 1 tbsp ketchup
  • 1/4 tsp pepper
  • 8 lettuce leaves
  • 8 tbsp salsa
Method
1.

In a large nonstick skillet coated with cooking spray, saute onion and garlic in oil for two minutes.

Stir in the carrot, chili powder and cumin. Cook for two minutes longer, or until carrot is tender. Remove from the heat and set aside.

In a large bowl, mash the pinto beans and black beans. Stir in the oats.

4.

Add the mustard, soy sauce, ketchup, pepper and carrot mixture and mix well.

5.

Shape into eight, medium-sized patties.

6.

Grill patties, covered, over medium heat for 4 - 5 minutes on each side, or until heated through.

7.

Serve on buns with lettuce and salsa.
