Halloumi fries

What you'll need
  • 75g plain flour
  • 550g halloumi
  • 2 tbsp smoked paprika
  • 2 tbsp chopped coriander
  • 1 red chilli
  • 150g fat-free natural yoghurt
  • Sunflower oil
Method
Step 1.

Cut the halloumi into chunky chip shapes.

 

Deseed the chilli and finely chop it.

 

Chop the coriander.

Step 2.

Mix the flour and paprika in a bowl.

 

Lightly coat the halloumi, trying to make sure there are no clumps.

Step 3.

Fill the bottom centimetre of a heavy-base pan with the oil. Heat until it’s sizzling. 

 

Add a few pieces of halloumi at a time and fry for a couple of minutes. Turn with tongs making sure it’s golden and crispy all over.

 

Take out the pan and place it on some kitchen roll. Repeat with the remaining halloumi.

Step 4.

Sprinkle the fries with salt and then toss to make sure they’re entirely coated.

Step 5.

Stir the coriander into the yoghurt and serve with the halloumi fries.
