Ham and cheese omelette
A quick, tasty, and budget-friendly mid-week meal that all the family will love.
- 30g grated mature cheddar
- 2 eggs
- 2 slices Co-op honey roast ham
- 2 tsp olive oil
- Salt and pepper, to season
Beat your eggs together in a mixing bowl and add a few grinds of salt and pepper.
Heat your oil in a frying pan or skillet for around 30 seconds and then pour in your egg mixture. Holding the handle of the pan, move the mixture around so that it is evenly spread across the pan until the bottom of the omelette is lightly set.
Add the grated cheese and ham into the centre of the omelette and cook until the cheese has melted. Using a spatula, fold the omelette in half with the ham and cheese in the centre and cook for a further 30 seconds until it lightly browns at the bottom. Flip over to brown the other side.
Slide the omelette onto your serving plate and serve with salad, coleslaw, or potatoes depending on your preference.
