
Hummus Chickpea Burgers

What you'll need
- 3 ½ tbsp sunflower oil
- 1 onion, chopped
- 2 cloves of garlic, sliced
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 400g chickpeas, drained and rinsed
- 90g hummus
- 50g plain flour
- 1 tbsp salt
- Some ground black pepper
- 40g cashew nuts
Method
1.
Heat a tablespoon of oil in a frying pan. Over a medium heat, add the onion and garlic, cooking and stirring for 5 minutes until soft. Add the cumin and coriander, cooking and stirring for 1 minute or so. Remove and cool for 5 minutes.

Place the mixture into a food processor with 200g of the chickpeas, and all the hummus and flour. Add a little salt and pepper, blending into a paste.

Add the rest of the chickpeas and nuts. Blend for several seconds until there is some texture remaining.
4.
Divide and roll the mixture into burgers that are approximately 1-2cm thick.
5.
Heat the rest of the sunflower oil in a large frying pan. Add a few of the burgers, cooking for 3 minutes on each side, until golden and crisp.
