Lunchbox pasta salad
Whip it up in no time at all and suitable for batch cooking. Get your lunches all in a row with this pasta salad the kids will love.

What you'll need
- 100g wholewheat pasta
- 2 tsp pesto
- Quarter tbsp light mayonnaise
- Half a tbsp crème fraîche
- A squeeze of lemon juice
- 50g of your favourite veg. We like sweetcorn, spring onions, peas or mixed beans
- 25g cherry tomatoes
- 50g sliced ham
Method
Tip: 90g of dried pasta makes 100g, a portion for an adult. For kids, you should aim for a portion between 45-65g when cooked for 4-10-year-olds and 65g-80g for 11-18-year-olds. You can also substitute the ham for different meat. Why not try tuna, turkey or chicken?
Step 1.
Cook your pasta for around 11 minutes, until it’s al dente with a slight bite to it.

Stir in the pesto and let it cool.
Step 2.
Meanwhile, cut the cherry tomatoes into quarters and prepare or cook your other vegetables.

Cut the ham into chunks.
Step 3.
Once the pasta has cooled, mix in the crème fraĂ®che, mayonnaise, lemon juice, vegetables and ham. Mix it all together, making sure all the ingredients are coated.Â
Step 4.
Divide into your packed lunches and chill until ready to eat.
