Mai tais are a colourful and tropical tiki cocktail and are easy to customise. So long as you have rum, lime juice, orange liqueur and an almond flavour, you can play around and invent your own.
- 50ml white rum
- 25ml Cointreau
- 15ml dark rum
- 25ml lime juice
- 15ml almond syrup (If you can’t find almond syrup, amaretto works too for an extra boozy drink)
- 50ml fresh orange juice
- Maraschino cherries, lime or mint for garnish
Put ice into a cocktail shaker and add in the white rum, Cointreau, syrup, lime juice and fresh juice. If you don’t have a cocktail shaker, use a clean jar with a tight lid or a thermos flask.
Shake for 20 to 30 seconds until the cocktail is chilled.
Strain the cocktail into a glass filled with crushed ice. For mai tais, we like to serve in a tumbler or a tiki glass.
Top with the dark rum and serve with garnish on the side.
