Mango & pineapple salsa

Refreshing, sweet & fruity - this is the perfect summer accompaniment for BBQs, fish dishes and salads.

What you'll need
  • 2 green onions, sliced
  • 1 Co-op mango, chopped
  • 1 Co-op pineapple, chopped
  • 1 red pepper, diced
  • 1 plum tomato, seeded and chopped
  • 3 tbsp finely chopped coriander
  • 2 tbsp lime juice
  • 1 tbsp lemon juice
  • Salt, to season
Step 1.

First, chop the mango, pineapple, tomatoes and peppers into bite-sized chunks. Slice the onion finely and combine with the other fruit and vegetables.

Step 2.

Mix everything together into a large bowl and pour over the lemon juice and the lime juice, followed by a sprinkling of salt. Scatter over the chopped coriander.

Step 3.

Serve as a fresh dip for tortilla chips or pitta breads, or as an accompaniment for meat, fish or roasted vegetables.
