No-bake chocolate biscuit cake
This no-bake fridge cake is packed with chocolate, biscuits, fruit and nut for a delicious medley of sweetness.
- 1 packet of McVitie's chocolate digestive biscuits
- 150g milk chocolate
- 150g dark chocolate
- 150g golden syrup
- 100g unsalted butter
- 75g raisins
- 60g pecans, chopped (optional)
Use cling film to line a shallow square tin, and make sure to leave extra cling film hanging over the sides.
Put the biscuits in a plastic bag, then using a rolling pin, bash them into pieces.
Melt the chocolate, butter, and golden syrup in a bowl placed over a pan of simmering water.
Remove from the heat then stir in the biscuit pieces, raisins, and pecans, if using.
Spoon the mixture into the tin. Leave to cool, then pop it in the fridge for up to 2 hours to set.
When ready to serve, take the cake out of the tin, remove the cling film and cut into 12 squares.
