What you'll need
  • 3 limes
  • 1 tbsp sugar
  • A handful of fresh mint
  • Soda water
Step 1.

Put the sugar and mint in a bowl and gently crush them together with the end of a rolling pin. Or, if you have one, use a pestle and mortar.

Step 2.

Cut the limes in half and squeeze the juice into a small jug.

Top tip: To make it easier to juice, put the whole lime on a chopping board and roll it back and forth with the flat of your palm and then cut it in half. This softens the limes, loosening the fibres and making it easier to get all the juice.

Step 3.

Put some crushed ice in two tall glasses. Pour the lime juice into both and add the mint mixture.

Top with soda water
