One-pot Creamy Potatoes and Chicken
We’d wager this is the tastiest, homemade comfort food you could get your hands on with so little effort. Chicken, potatoes and creaminess all in one pot. A hearty springtime classic - say no more.
- 4 chicken breasts
- 300g potatoes, sliced thinly
- 1 tbsp minced garlic
- ½ teaspoon chopped thyme
- ⅓ teaspoon oregano, finely chopped
- 250ml (approximately 1 cup) of cream
- Salt and pepper to season
Season your chicken breasts and add to a greased large pan, cooking over a medium heat for 5-10 minutes on each side until browned and cooked through. Set aside and cover.
Add the garlic, thyme, oregano and potatoes to the large pan. Cook them through for 6 minutes, turning them halfway through - the potatoes should be browning on the edges.
Add the cream, cooking for a further 5 minutes. Make sure to stir occasionally, and the mixture will thicken. Season to taste with salt and pepper.
Add the chicken, coating them with the sauce.
