Stuffed jacket potatoes
Don’t miss this lunchtime staple… our stuffed jacket potatoes are healthy, filling and ready in 1, 2, 3!
- 4 medium potatoes
- 125g grated mature cheddar
- 100g mixed peppers, chopped finely
- 85g sweetcorn
We've gone for a mix of cheese, pepper and sweetcorn here but you can choose anything you like. Tuna, chives, spring onion, chilli, baked beans...it's up to you!
Pre-heat the oven to 200°C/180°C fan/gas mark 6.

Bake the potatoes for about an hour, waiting until the skins are nice and crispy.

Take them out of the oven and let cool completely. You can do this up to 2 days in advance if you need to.
When you're ready to eat, cut the potatoes in half lengthways.

Heat the oven back up to 200.
Scoop out the middle of each potato, being careful not to break the skin.
Â
Put the scooped out potato into a separate bowl.
Mash up the potato and add your filling. In this instance, it's the pepper, sweetcorn and cheese.

Mix it all together.
Â
Scoop the filling back into the potato skins and top off with extra cheese.
Cook in the oven for another 10 minutes until golden and crispy.
