Parma ham and mozzarella parcels
- 1 pack mature parma ham, the slices halved
- 2 large balls of buffalo mozzarella
- 6 large flat mushrooms
- Fresh parsley
- 1 tbsp Virgin Olive Oil
- Salt and black pepper
Drizzle the mushrooms in olive oil, and slowly grill until they're nice and soft.
Leaving the grill on, remove the mushrooms and allow to cool on the side.
Lay two slices of parma ham on your chopping board in the shape of a cross, middle to middle. Place one mushroom in the middle, and add the remaining ingredients with a nice sized lump of mozzarella cheese.
Cover in some more fresh parsley, and bring the parma ham over the mushroom and cheese to form a wrap. Secure with a cocktail stick.
Place under the grill until the cheese has nicely browned.
Serve on a bed of fresh salad leaves.
