A classic side dish for any BBQ or picnic. Easily make this vegan by swapping out for vegan mayo or chop up some grilled bacon for an extra crunch.
- 800g new potatoes
- 3 shallots
- 3 tbsp mayonnaise (or as much as you want)
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- Small handful parsley
Bring a pan of water to the boil and add salt.
Add the potatoes and cook for around 20 minutes or until soft.
Drain the potatoes and leave them to cool.
After the potatoes have cooled down, cut them into rough chunks.
Chop the shallots and mix in a bowl with the mayonnaise, olive oil and vinegar. Mix the potatoes in, coating them with mayo and oil.
Finely chop the parsley and sprinkle throughout.
