Quick and easy salsa
This salsa couldn’t be easier to make. A fantastic accompaniment for nachos, as a topping for salad or a dip for your crisps.
- 6 medium tomatoes
- ½ red onion
- 1 garlic clove
- ½ lime
- ½ bunch fresh coriander
- White wine vinegar
Peel your tomatoes. To do this, remove the stems, wash thoroughly and then cut a shallow X into the bottom of the tomato.
Bring a pan of water to the boil and put the tomatoes in the water. Leave for 15 seconds or until you see the skin start to shrink and peel.
Remove from the water and let cool. Then peel the skin off.
Finely chop the onion, garlic and coriander.
Juice the lime and set it aside.
Roughly chop the tomatoes into chunks.
Mix it all in a bowl, stir and then refrigerate until you’re ready to serve.
