Raspberry peach gin fizz
A fruity and fun summertime cocktail to serve to your guests when they come over for a BBQ.
- 1 bottle prosecco
- 40ml dry gin
- 1 peach, stone and skin removed
- 1 cup of raspberries (keep 4 raspberries separate for garnish)
- 1 tbsp water
Divide the gin between 4 champagne flutes and half fill them with prosecco.
Blend the raspberries and chopped peach in a juicer with the water until a smooth puree is created.
Divide the fruit purée between glasses and stir with a cocktail mixer or spoon to incorporate, then top the glasses up with more prosecco.
To garnish, add a fresh raspberry at the top of the glass, then serve to your guests.
