Roast beef with potatoes and green beans

Juicy beef joint served with crispy roast potatoes and steamed green beans makes for a delicious Easter lunch.

What you'll need
  • Co-op British beef joint
  • Co-op British Lily potatoes
  • Co-op trimmed fine beans
Method
Step 1.

Preheat the oven to 240c/475 fan/gas mark 9.

Step 2.

It’s time to prep the beef joint!

 

Remove from the fridge 30 minutes before cooking to let it come up to room temperature. Place the middle of a large baking tray, drizzle with oil and season with salt and black pepper.

Step 3.

Place the tray in the oven and reduce the temperature to 200°C/400°F/gas 6.

 

For medium beef, cook for 1 hour. If you prefer medium rare, cook for 50 minutes. For well done, leave it in for an extra 15 minutes.

Step 4.

At this point, get started on your roast potatoes. You’ll want to get them in the oven for the last 45 minutes of cooking to ensure that they’re perfectly crispy.

Step 5.

Once the beef is cooked to your desired doneness, remove from the oven and leave to rest for 15 minutes. 

 

While the beef is resting, steam your green beans according to pack instructions.

Step 6.

Carve the beef and serve with the roasties and green beans. Don’t forget the gravy and horseradish!
