This easy sausage casserole recipe is a real one pot wonder! Perfect for the colder months, this hearty dish will become a go-to for family mealtimes.
- 400g Co-op chopped tomatoes
- 8 Co-op Butcher's Choice pork sausages
- 4 Co-op carrots, sliced
- 1 Co-op onion, chopped
- 2 tbsp olive oil
Preheat the oven to 180°C/160°C fan/gas mark 4.
Peel and slice the carrots, and chop the onion.
Fry the sausages until brown. Add the chopped onion and cook for a further 3-4 minutes, until softened.
Add the carrots and chopped tomatoes and bring to a simmer, so it's gently bubbling.
Transfer to an ovenproof casserole dish and cook for around 45 minutes.
Once cooked, serve immediately. This dish is great on its own, but why not serve with creamy mash?
