Seasonal Roasted Sprouts
- 750g medium sprouts, trimmed and outer leaves removed
- ½ onion; chopped
- 250ml chicken stock
- 3-4 strips bacon; diced
- 1 clove garlic; finely chopped
- 1 tbsp olive oil
- A knob of butter
Preheat oven to 200°C.
In a large frying pan, heat the olive oil and butter and gently cook the bacon and garlic, (take care not to burn the garlic). Do not cook the bacon all the way through, as you will finish your dish in the oven.
Add the chopped onion and cook until clear.
Add the sprouts and stock. Simmer for 5 minutes.
Transfer the sprouts to a 2-3 inch roasting tray, lined with foil, and spread out evenly.
Cook sprouts and bacon for 20 mins, until crispy. Turn sprouts over halfway through to ensure even cooking.
