Sourdough toast with beans and feta

The perfect brunch dish. Delicious, takes only 7 minutes to make and guests can serve themselves.

What you'll need
  • 4 thick slices of sourdough bread
  • Half a 400g can of chopped tomatoes
  • 2x 250g mixed bean salad or 1 can of mixed bean salad, drained
  • 80g Veggie feta
  • Olive oil
Method
Step 1.

Open the can of chopped tomatoes and, with a fork, break up the tomatoes. Stir them in the can and then pour out over a sieve. This will get rid of the excess water, leaving you with lovely thick tomatoes.

Step 2.

Heat a pan on the hob over a medium heat. Simmer the beans and tomatoes for 7 minutes until the sauce reduces and thickens a little.

Step 3.

Drizzle the sourdough with olive oil and grill until both sides are golden and toasted.

Step 4.

Put the tomato and beans on the bread and sprinkle over with veggie feta (swap this for a vegan alternative for Veganuary). Tuck in!
