What you'll need
  • 1 packet readymade shortcrust pastry
  • 500g bacon
  • 170g maple syrup
  • 165g brown sugar
Method
Step 1.

Preheat your oven to 180C/160 fan/gas mark 4.

Take a cupcake tin and line each hole with foil. Spray a small amount of cooking spray on the foil.

Roll out your sheet shortcrust pastry and, with a cutter, cut circles out of the dough. Place each circle in the cupcake tin, it should line the bottom and sides of each hole in the tin.

If the dough tears, make sure you seal it back together with water or oil.

Step 2.

Fry your bacon in batches in a large pan, cooking until it's just about done but not crispy. It will continue to cook as you bake it, so you want to be slightly undercooked at this point.

Step 3.

Take the bacon out of the pan and place it on kitchen roll to get rid of excess grease or oil.

Let it cool slightly. Then chop up into small pieces.

Step 4.

Sprinkle most of the brown sugar in the bottom of each pastry cup. Top with maple syrup so it covers the brown sugar. Then, sprinkle in the bacon and finish with the remaining brown sugar.

The cups will be pretty full but all the more for you to enjoy!

Step 5.

Bake in the oven for roughly 12 to 15 minutes. The bacon should be crisp and the maple syrup bubbly and caramelised.
