Super Veggie Bruschetta

What you'll need
  • 3 large ripe tomatoes, seeded and diced
  • 1/2 large red onion, diced
  • 1 cucumber, peeled, seeded, and diced
  • 1 handful of fresh basil leaves, chopped
  • Pinch of salt and pepper
  • 1/2 tbsp Virgin Olive Oil
  • 1 tbsp red wine vinegar
  • 1 baguette
  • 2 cloves garlic, peeled

In a large bowl, combine tomatoes, onions, cucumbers, and basil; season lightly with salt and pepper. 


Add olive oil and vinegar, and toss well to combine.


Let stand at room temperature for at least one hour - but no longer than three.


Heat the grill. Cut bread diagonally into 1/2-inch-thick slices. Brush both sides lightly with olive oil and grill on both sides until toasted.


Rub the hot bread lightly with the garlic cloves, on one side only.


Sprinkle with salt and pepper, and top with tomato mixture.


Let it stand a few minutes to allow the juices to soak into the bread before serving.
