Traditional Welsh rarebit
A traditional delicacy for celebrating St. David’s Day, Welsh rarebit certainly isn’t your average cheese on toast.
- 375g mature cheese, grated
- 100ml beer (or milk, if you prefer)
- 25g butter
- 6 large tomatoes, sliced (optional)
- ½ tsp mustard
- Some thick-cut bread (we recommend 3 slices per serving)
- Salt and pepper, to taste
Heat the butter in a pan until it melts.
Add the grated cheese and stir until melted.
Pour in the milk while stirring continuously. Add the mustard and season with salt and pepper.
Turn up the heat and boil the mixture. Let simmer for another 1 to 2 minutes before removing from the heat. This is your rarebit sauce.
Toast the bread slices, then layer with sliced tomato (if using). Place the slices on top of each other.
Transfer to a baking tray lined with baking paper and pour over the rarebit mixture.
Grill for 4-5 minutes or until golden brown.
It’s easy to leave out the beer from this recipe. Replace with milk for a super delicious alternative.
If you want to create extra sauce for later on, the mixture keeps well in the fridge for several days.
