Vegan banana bread

A delicious and healthy snack that is both egg and dairy free. Also, the perfect way to use up your ripe bananas.

What you'll need
  • 225g plain flour
  • 100g brown sugar
  • 75ml oil (vegetable, coconut or sunflower)
  • 50g vegan dark chocolate nibs (optional)
  • 3 large, ripe bananas
  • 3 tsp baking powder
  • 3 tsp cinnamon
Step 1.

Heat your oven to 200°C/180°C fan/gas mark 6.

Step 2.

In a mixing bowl, mash your bananas with a fork and then combine your oil and brown sugar. Add your plain flour, baking powder and cinnamon and mix well together. If you are using chocolate nibs, add these now too.

Step 3.

Line a loaf tin with parchment paper, and then pour your banana bread mixture into the tin. Place into the oven and bake for 20 minutes. Now check the bread and if it is browning at the top, cover with a layer of foil. Then put back into the over for a further 20 minutes.

Step 4.

Remove from the oven and allow to cool on a cooling rack before slicing. Enjoy warm, or put in a tin to enjoy the next day.
