Vegan pasta salad
Our vegan BBQ side dish goes great with any BBQ menu. Wow your guests with this simple but tasty pasta salad.
- 300g pasta
- Co-op vine ripened tomatoes, chopped
- 1 bag of fresh rocket
- 1 red onion, sliced
- Half a cucumber, sliced
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper
Boil the pasta according to the package instructions. Al dente pasta works best for this dish as it gives a more fresh feel.
Once the pasta is cooked, drain thoroughly and add to a large serving bowl.
Add the oil, balsamic vinegar and salt and pepper then stir.
Allow the pasta to cool, then add the cucumber, onion, tomatoes and rocket then stir again so the dish is evenly mixed.
Serve in the bowl for your guests to help themselves.
