Veggie Baked Bean Chilli
This easy, step-by-step recipe will create a flavoursome, belly-warming baked bean chilli that is suitable for vegetarians. Perfect for serving on a jacket potato, with fluffy white rice or with chips.
- 1 tbsp olive oil
- 1 onion, chopped
- 1 pepper
- Tin of chopped tomatoes
- Tin of baked beans/kidney beans
- 2 garlic cloves, crushed
- 2 tsp chilli powder
- 1/2 tsp cumin powder (optional)
- Sour cream (optional)
Fry your onions and peppers until soft.
Add chopped tomatoes, baked beans, garlic, chilli and cumin powder, salt and any of your fave (chopped) veggies.
Cook on a low heat for 20 minutes, stirring occasionally.
Top with sour cream and serve with hasselback potatoes.
