Welsh cakes

Let’s get ready to celebrate St. David’s Day. These traditional Welsh tea-time treats are simple to make and delicious to eat.

What you'll need
  • 225g self-raising flour
  • 100g butter or spread
  • 50g caster sugar
  • 50g currants
  • 1 egg
  • 3 tbsp milk
  • 1 pinch sea salt
Method
Step 1.

Start by mixing together the flour and the salt in a large bowl. Then rub in the butter or spread, as well as the sugar and currants. Stir well together.

Step 2.

Beat the egg along with the milk and then add to your flour mix until you have a firm dough.

Step 3.

Roll the dough out onto a lightly floured board until it is approximately 5mm thick. Then stamp out the dough into 8 circular cakes using a round biscuit or cookie cutter.

Step 4.

Grease your frying pan or griddle with a little butter or spread and then add to a medium heat until hot. Add your cakes to the pan and cook on each side for about 3 to 4 minutes, until they appear golden and have risen slightly.

Step 5.

Once cooled, sprinkle your cakes with a little sugar and enjoy straight away. Eat alone or serve with butter and jam for an extra indulgent treat!
