The Cosy Get-together

The menu

For a cosy, intimate get-together you want hearty, indulgent food that’s easy to prepare and easy to enjoy. These dishes are designed for sharing, paired with a delicious drink to make your party one they’ll remember.

Starter: Charcuterie board

An epic spread of nibbles fit for any occasion, loaded with meat, veggies and snacks. This charcuterie board is the perfect sharer starter. 

Assemble this appetiser up to an hour before serving.

Prep time: 20 minutes

Serves: 10

Ingredients:

  • 500g red seedless grapes
  • 400g mixed olives
  • 150g sundried tomatoes
  • 150g almonds
  • 3 apples, sliced
  • 1 baguette, sliced
  • Assortment of cheese (we recommend Brie, Gruyère, and cheddar)
  • Assortment of cured meat (salami, prosciutto, and chorizo work well)
  • Crackers of your choice
  • Dried fruit of your choice
  • Extra virgin olive oil, for dipping
  • Balsamic vinegar, for dipping

Method:

Step 1.

Slice the meats, and place on a large serving board or platter alongside the cheeses.

Wash and dry the fresh fruit, then thinly slice and add to the board.

Step 2.

Place small bowls on your board and fill with the olives, nuts, olive oil, balsamic vinegar, as well as any other of your favourite dips.

Step 3.

Lay all the ingredients around the board in a visually appealing manner.

Fill in any gaps with salami pieces folded in quarters.

Serve and enjoy!

 

Main: Vegetarian bean chilli

This easy flavoursome, belly-warming baked bean chilli is suitable for all the guests at your table. But if you’re catering for traditional chilli lovers, our slow cooker chilli will do the trick. Perfect for serving with a jacket potato, fluffy white rice or tortilla chips.

Prep time: 5 minutes

Cook time: 25 minutes

Serves: 2

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 pepper
  • Tin of chopped tomatoes
  • Tin of baked beans/kidney beans
  • 2 garlic cloves, crushed
  • 2 tsp chilli powder
  • 1/2 tsp cumin powder (optional)
  • Sour cream (optional)

Method:

Step 1.

Fry your onions and peppers until soft.

Step 2.

Add chopped tomatoes, baked beans, garlic, chilli and cumin powder, and salt.

Step 3.

Cook on a low heat for 20 minutes, stirring occasionally.

Step 4.

Top with sour cream and serve with your favourite carbohydrate; a jacket potato, rice or chips!

Drink: Rum and ginger cocktail

A spiced take on the classic drink, this rum and ginger cocktail is sure to keep you warm on those dark ‘n’ stormy winter nights. 

Prep time: 3 mins

Serves: 1

Ingredients

  • 50ml spiced rum (Captain Morgan is one of our favourites!)
  • 30ml ginger beer or prosecco
  • 20ml cranberry juice
  • 15ml lime juice
  • 10ml ginger wine
  • 5ml honey
  • Nutmeg

 

Method

Step 1.

Grate the fresh ginger and add it to a cocktail shaker along with lime juice and honey.

Step 2.

Add the rum, cranberry juice and ginger wine and shake thoroughly.

Step 3.

Through a sieve pour over ice into a champagne glass and top up with ginger beer or prosecco.

Step 4.

Garnish with grated nutmeg and serve.
